El Jaragual is a 150-hectare farm sitting at 1,500 meters above sea level in the hills of Amalfi, in Antioquia, Colombia. This area offers the altitude, climate, and biodiversity that’s perfect for growing coffee.
Strawberry sweetness, red apple tartness, and a marshmallow-like sugary edge. Well balanced with bright fruit notes and a lightly caramelised finish.
This coffee has been crafted through a meticulous process, starting with selecting ripe cherries and floating to remove any imperfections. Coffee cherries are then oxidised, pulped, and fermented for 62 hours at 25°C with specific yeast strains before being washed and dried over 76 hours at 40°C.
Vibrant notes of strawberry and red apple, complemented by a marshmallow-like sweetness.
